Chicken Gumbo

Chicken Gumbo

We are having some cool weather down here in Tampa FL. and it is nice for a change. So I decided to make a pot of Chicken Gumbo for dinner this evening and it was so good! I love this recipe because it is really easy to make and you can even cook the Chicken Gumbo in a crock pot and let it simmer all day. Some of us as we age have to watch our waist line and this recipe is Low Fat and you can not tell the difference.

So ladies grab your apron and we are going to make some Chicken Gumbo for dinner!

1 pound  boneless chicken, cut into bite size pieces

1 teaspoon dried thyme

1 bay leaf

1/8 teaspoon ground red pepper

1 tablespoon chopped parsley

kielbasa  sausage

In a crock pot add the following ingredients: onion, green pepper, garlic clove, chicken broth, crushed tomatoes, ground black pepper, chicken, dried thyme, bay leaf, ground red pepper, chopped parsley. Stir all the ingredients together well and simmer on low all day.

Chicken with Stuffing

Thought I would share with you one of my favorite Crock Pot meals which is so yummy! I found the recipe at allrecipes.com and have found some of the recipes to be really good. When you get time be sure to check out the website above and make sure to read all the reviews first before trying out the recipes. Tonight I served this dish and I forgot to take a picture so I found the above picture on the website. So if you need something for dinner and don’t have a lot of time I would suggest that you give this recipe a try.

4 boneless, skinless chicken breast halves

1 can cream of chicken soup, undiluted

1 1/4 cups water

1/4 cup of butter

1 (6 ounce) package stuffing mix

Place the chicken in a greased crock pot. Pour the soup over chicken. In a bowl, combine the water, butter, and stuffing mix, spoon mixture over the chicken. Then cover and cook on low for about 4 hours.

Sewing Room Redo

Well guess what my favorite people? I have finally finished the sewing room and I am really enjoying the new fresh look. At the moment, I have placed my fabric in a dresser in another room until I can find something to put in the sewing room. During the redo I found me a friend and guess what it is. Our subdivision had a community yard sale and I came across a Singer Sewing machine from the 1970’s and it works like a dream and it’s even in a cabinet. The women selling the machine was super nice and let me try out the sewing machine for a while to see if I wanted it or not. You know me I could not pass it up. Thought I would share some pictures with you!
