Lasagna Roll-Ups

Well another weekend gone and the start of a new week. Where does the time go!  One might be wondering “what can I cook for dinner this week.” I have just the answer for you, so grab your aprons ladies, and follow me to the kitchen, and we will cook up a really good meal for this evening. We are going to make some lasagna Roll-Ups. Here we go!

Ingredients:

1 pound mild Italian sausage, casing removed

1/2 cup chopped onion

1 (12-ounce can) Tomato Paste

1 2/3 cups Water

1 teaspoon dried oregano leaves, crushed

1/2 teaspoon dried basil leaves, crushed

1 egg

1 package (10 ounces) frozen chopped spinach, thawed, squeezed dry

1 (15-ounce) container of ricotta cheese

1 1/2 cups(6 ounces) shredded mozzarella cheese

1 cup grated Parmesan cheese

1/2 teaspoon salt

1/4 ground black pepper

8 dry lasagna noodles, cooked, drained, and kept warm

In a large skillet, crumble sausage. Add onions and garlic; cook until sausage is no longer pink and then drain. Next, stir in the tomato paste, water, oregano and basil; cover and bring to a boil. Reduce the heat to low and simmer for about 20 minutes or so. In a medium bowl, beat egg lightly and then add spinach, ricotta cheese, 1 cup of mozzarella cheese, parmesan cheese, salt, and pepper.

Spread about 1/2 cup cheese mixture onto each of the 8 noodles; and then roll them up. Place seam side down, in a baking dish. Pour the sauce over the rolls ; and top with remaining mozzarella cheese. Bake in a preheated 350 oven for about 30 to 40 minutes.

    Oh yum yum yum. I love making cannelloni – they work so well. Sort of like Italian enchiladas. This looks delicious.

      The roll-ups are rich. So I think the next time I make them I will use ground round instead of Italian Sausage.
