Well hello there friends! So how was your weekend and did you do anything fun? My husband and I painted the sewing room and finally finished Sunday evening. With all the painting and everything going on, I just wanted a simple dish and came across this recipe that I have had for years. Not sure where I found this recipe but I do remember how easy it is to make.
1 (24 ounce) package frozen O’Brien hash brown potatoes
2 cups cubed fully cooked ham
3/4 cup shredded Cheddar cheese (divided)
2 cups of sour cream (16 0z )
1 can of corn
1 can condensed cheddar cheese soup, undiluted
1 can condensed cream of potato soup, undiluted
1/4 teaspoon pepper
1 small green pepper
- In a large bowl, combine potatoes, ham, 1/2 cup cheese and onion.
- In another bowl, combine the sour cream, soups and pepper; add to the potato mixture and mix well. Then transfer to a greased 3-quart baking dish. Sprinkle with remaining cheese.
- Bake, uncovered , at 350 degrees for about 60-65 minutes or until bubbly and potatoes are tender. Once dish is removed from the oven, let it sit for 10 minutes before you start serving.
Note: I always cook the onions and peppers before adding to mixture. Instead of the plain O’Brien Potatoes, I buy the potatoes that have onions and peppers added to give more flavor.
