Chicken Cacciatore over Rice

I am posting one of my favorite recipes that you might like to try over the weekend. Like so many of you, I am always looking for ways to stretch my dollar so I often try to prepare dishes that can be reheated and served more than one time. Be sure to add the ingredients to your grocery list and have fun making the dish. Have a great weekend and I will see you on Monday!


  • Olive oil
  • 1 Onion (chopped)
  • 1 Green Pepper (Chopped)
  • 2 Garlic cloves (minced)
  • 2 cans diced tomatoes (15 ounces)
  • 1 can Tomato paste ( 6 ounce)
  • 2 tablespoons Oregano
  • 2 Bay leaves
  • Salt and Pepper to your taste
  • Boneless chicken breast (cut into bite size)
  • 1 small bag of rice


In a large saucepan over medium heat; add onions, green peppers ,and garlic cloves. Next, add chicken and cook until no longer pink. Last add the diced tomatoes, tomato paste, salt, pepper, bay leaves, and oregano. Simmer for about an hour to bring the flavors together. Last, cook rice according to package. Serve over rice or spaghetti and enjoy.
