Chicken Gumbo

We are having some cool weather down here in Tampa FL. and it is nice for a change. So I decided to make a pot of Chicken Gumbo for dinner this evening and it was so good! I love this recipe because it is really easy to make and you can even cook the Chicken Gumbo in a crock pot and let it simmer all day. Some of us as we age have to watch our waist line and this recipe is Low Fat and you can not tell the difference.
So ladies grab your apron and we are going to make some Chicken Gumbo for dinner!
Ingredients needed:
3 tablespoons vegetable oil
1 small onion, chopped
1 large green bell pepper, chopped
1 garlic clove, minced
3 1/2 tablespoons whole wheat flour
2 1/2-3 cans (14 1/2 ounces each) reduced sodium chicken broth
3/4 cup crushed tomatoes
1 pound boneless chicken, cut into bite size pieces
1 teaspoon dried thyme
1 bay leaf
1/8 teaspoon ground red pepper
1 tablespoon chopped parsley
cooked long grain rice or brown rice
1 box (10 ounces) frozen cut okra
kielbasa sausage
In a crock pot add the following ingredients: onion, green pepper, garlic clove, chicken broth, crushed tomatoes, ground black pepper, chicken, dried thyme, bay leaf, ground red pepper, chopped parsley. Stir all the ingredients together well and simmer on low all day.
45 minutes before serving add the flour,okra, and kielbasa. Cook the rice according to package and serve over the Chicken Gumbo.
